Kitchen Essentials AND Utensils Part 2

PASTA MACHINE

For the purist who prefers to make pasta from scratch, this machine has a variety of discs to produce the different pasta types, from macaroni to fettuccine.

DEEP FAT FRYER

Thermostatically controlled fryers cook chips perfectly.

ELECTRIC WOK

These offer similar facilities as standard woks, but they can also be used for stewing, steaming, poaching and simmering.

SANDWICH TOASTER

BLENDER

Kitchen EssentialMarvellous for making mayonnaise, pâtés, sauces, purées and soups, as well as preparing baby foods.

BATTERIE DE CUISINE

The list of tools includes more than the necessities. A good knife, spoon and chopping board might be enough for some. Accumulating a random personal collection is one of the joys of cooking.

KNIVES

Quality is a cook’s best friend, and superior tempered stainless steel knives are the best. You’ll need one large, one medium and one small general purpose knife, as well as a paring knife, a serrated bread knife, a boning knife and a sharpening stone. To store them you will need a

magnetic knife rack or a knife box so that they do not get battered in the drawer. See also page 84.

COOKWARE AND CONTAINERS

Good cookware makes cooking easier. Different materials have different qualities - see the ABC of cookware on page 89.

You will need three saucepans in various sizes, a heavy-duty frying pan, a small frying pan for frying eggs, a casserole dish, a large mixing bowl, a nest of three mixing bowls, a ceramic quiche dish with fluted edges, a soufflé dish, a meat roasting pan, a baking sheet, a bread baking tin, two round cake tins, a wire cooling rack, a wire sieve, a metal colander, a salad shaker, rubberized ice trays, glass or transparent plastic storage jars, a tea pot.

UTENSILS

Culinary fashions lure us into buying all sorts of exotic utensils that are often short-lived. When you are starting out, choose equipment according to your needs, and remember that rubber, plastic or nylon utensils should be used in cookware that has a non-stick finish. Special utensils that are very useful include an eggslicer, a salad spinner, a pasta cutting machine and a yoghurt maker.

GOOD MEASURE

Measuring jug, scale, set of measuring spoons and cups, automatic timer, all-purpose cooking thermometer, lemon squeezer, plastic board and wooden bread board.

KITCHEN DRAWER

Slotted turner or meat patty turner, pie or cake cutter, cheese plane, cheese knife, cheese cleaver, wire cheese slicer and vegetable peeler, a corkscrew with a two-armed handle, and a bottle opener.

Tea strainer, can opener, skewers, rolling pin, apple corer, garlic press, rubber spatulas, pizza cutter, pastry wheel, pastry brush, potato masher, whisks and rotary whisk.

Metal and wooden spoons, soup and sauce ladles, a grapefruit spoon with perforated edge, and a melon and ice-cream scoop.

Skimmer (removes fat from stews), pasta spoon and fork, a meat fork (with straight tines close to each other), pot fork (has straight tines that are farther apart than the meat fork), kitchen fork (similar to the pot fork), cheese/vegetable grater, nutmeg grater, and lemon/orange zester.
