In summer time the cooking is easy. To keep your guests lingering at your table, avoid a fussy table setting and scour cookbooks for ideas and inspiration for preparingtasty, home-cooked meals for your guests.

Evening entertaining can be magical as the light fades, the air stills and the first stars appear. Vintage Provençal table linen, fresh-cut flowers and wine sets the ambiance.

This French look can be achieved in any style of home, from contemporary to Provençal and from farmhouse to city apartment. Serve haute cuisine menus that feature dishes like succulent seafood, stuffed duck, fine cheeses and orange chocolate cake. Other sophisticated and delicious dishes can include cheese souffles, salmon fillets with a sesame crust, chicken tagine, coq au yin, assorted Mediterranean roasted vegetables, gratin dauphinois and crepes suzette.

Candles in hurricane lampshades come into their own in the summertime, creating a romantic atmosphere. A simple table with slatted chairs can be tastefully decorated with pretty striped table linen and individual bowls of tiny blossoms at each selling. Or for an exotic touch, try using ripe red peppers instead.

Dry white wines go well with many starters and fish, but you may also consider a light young red wine instead. Full- bodied white wines could equally be drunk with meat. Be guided by your taste. Serve white and rosé wines chilled and red wine at room temperature.

To chill a wine, refrigerate it for an hour or two before serving, or immerse in an ice bucket for at least half an hour. Uncork red wines an hour before serving to let them breathe. Select wines which would be suitable for each course of the meal. Affer dinner serve liqueur, brandy, whisky or a good old port.
